Today really feels like spring. It’s 60 degrees outside, sunny, and just a little bit windy. I found myself driving to the market with the windows rolled all the way down, singing to the radio at the top of my lungs. There’s something about a day like today that makes me think of fresh starts and new beginnings. This chickpea scramble breakfast bowl is my vegan answer to scrambled eggs. I can’t take credit for the idea of “scrambling” chickpeas, but this is my version that I’ve come to love. Chickpeas are such a interesting ingredient…. the water in which the chickpeas sit in their can – known as aquafaba – has amazing, egg-like properties, and can be used for baking or even to make meringues. In this recipe, the aquafaba lends the chickpeas their scrambled egg-like texture. Move over scrambled eggs... this healthy, vegan chickpea scramble is incredibly easy to make and is crazy delicious! I graduated. I moved out. I entered the workforce…..and this is it? 30 more years of this? It’s the common side effects of young adulthood, the yearning for something more, the need to be able to do more. It’s a thought that’s been replaying in my head. “I am way too young still, to be ‘over it.'” When I was a kid, roughly 8-9 years old, my dream was to become a writer. I often received compliments on my work. I won writing contests, I had several pen pals, I kept many journals, and my English teachers in high school would give me 100’s on the assignments I turned in. In any way I...…I graduated. Sometimes the hardest part of a task is just getting started. I decided to spend 15 minutes in my garden this morning. I’m jumping right into planting crops that I think can survive early summer. That’s one of the great things about gardening in Florida. You’re never actually behind in planting; just plant what’s good for that time. I have some cabbage in, and I decided to plant a row of marigolds mixed with white zinnias. Sounded like fun. I’m going to plant more flowers in my garden this summer. Can you believe we’re only a few days out from May?! April has absolutely flown by!! But I’m not complaining because we are ready for summer. Bring on the warm weather!! Anyway, today I wanted to share a few new purses I got for spring from Walmart. Most people don’t realize that Walmart has designer brands like Coach, Ray-ban, Gucci, Michael Kors, Vera Bradley, Prada etc all on walmart.com for way less than anywhere else! And there’s actually TONS of options too. I got the cutest pink blazer, a great striped tee for under TEN BUCKS, white jeans, and an awesome stretchy denim jacket. OK first up is this NINE DOLLAR tee shirt. I got a medium and it comes in four colors! And the white cropped jeans fit true to size. This denim jacket is a great weight for spring and comes in a few different color options.
