Bloom Phase: How to Read the Bubbles In Your Coffee
Your coffee is talking to you. No, not literally. Even though it might feel like the only thing pulling you out of bed every morning is the call of your morning brew, your coffee is actually communicating with you in a much more subtle way. As you pour water over your ground coffee, waiting patiently for that first sip of your pour-over that promises to bring you back to life, take a peek at what’s happening in the brew bed. What you will see is a language expressed in bubbles. When you pour hot water onto coffee grounds, bubbles will pop to the surface for the first few moments,...…Your coffee is talking to you. The Case for Bad Coffee
Standing at my kitchen counter, I measure out two teaspoons of Maxwell House instant coffee into my favorite mug, pour in 12 ounces of hot water from a tea kettle, and stir for a moment. I wasn't always like this. I used to spend silly amounts...…Standing at my kitchen counter, I measure out two teaspoons of Maxwell House instant coffee into my favorite mug, pour in 12 ounces of hot water from a tea kettle, and stir for a moment. How to Make Great Pizza in an Outdoor Pizza Oven
I got a gas-fired outdoor tabletop pizza oven this past summer (an Ooni Koda), and when I first fired it up I had a little trouble working with it, which left me feeling a little perplexed. I’ve been making pizza for nearly 40 years, and consider myself something of a pizza expert, at least when it comes to making it at home. Pizza was the first thing I taught myself to cook, and I've been tweaking my own recipes ever since. I've also developed pizza and flatbread recipes for publication for more than 10 years now, starting with the New York-style pie I created for Cook’s Illustrated...…I got a gas-fired outdoor tabletop pizza oven this past summer (an Ooni Koda), and when I first fired it up I had a little trouble working with it, which left me feeling a little perplexed.
