And he doesn’t even go near food meant for the kids, so I take it as a huge success.I do have another veggie fritters recipe on the blog here, but that ones uses flour as a thickener.This one, uses grated cheese instead.Whoaaaa… say what?The three ingredients areSo not vegan, unfortunately, but the lack of flour is good news for those looking for a gluten-free version of fritters to give to their baby.The egg acts as a binding “glue”, the cheese as thickener and the sweetcorn as garnish.Easy peasy, sweetcorn sqeezy.Note: make sure you grate the cheese on a small sized grater, even a zester if you have one. Trust me on this one, it helps with the consistency of the final result.Let your little one grab them in his fist. He doesn’t need a pincer grasp for these.Just make sure they have cooled down a bit, as the method I’m using to cook them rather makes them hot all the way through for a couple of minutes at least.So what’s this secret method, you ask?I love my waffle maker so much, I use it for most warm things lately.Including these fritters.When you come to think of it, a waffle maker is just a double sided frying pan. So double the heat in less of the time.How cool is that?Just drop your batter in there using a spoon and put the lid down to cook it. Make sure to oil the plates first, yes? It’s been a long time since I got anything stuck on them, but I never forgot… *blueberry waffles, hem, hem*facepalm*.Or you can use a normal non-stick frying pan if you don’t have a waffle maker or don’t want to invest in one.
