Getting creative in the kitchen, especially around this time of year, means apples! I went apple picking with my sister on Monday at&nbsp;Blackman Homestead Farm. Wow, do they have a variety of apples! I also got pears, which I’m hoping to pickle… little seckle pears. We’ll see how that goes. But today was the day to make a delicious, moist, apple cake. And as I was making it, I also noticed some Tenessee Cider Whiskey in the cabinet, so decided to make a cider whiskey glaze with butter and cream to pour over the top. It’s amazing. The recipe is below, and as I mentioned in the episode, there are lots of alternatives you can use with this recipe to make it your own! Apple Cake with Tennessee Cider Whiskey
For the glaze:
sprinkle with coarse salt if you like
Preheat oven to 350 degrees
Grease a 9 x 13 baking pan
whisk the following together in a large bowl until well blended, then set aside:

Fold in the chopped apples until combined
Pour/spread into your greased pan, making sure the top is even.
Bake for 45 – 50 minutes. After 35 minutes, cover the top of the pan with foil to prevent the cake from getting too brown.
Check the cake at the 45-minute mark and keep testing until your tester comes out clean. Do not overcook!
Remove from the oven and allow to cool for 30 minutes.
If you use the glaze, now is a great time to make it. It does have to cool for 20 minutes or so to thicken, so if you’re not serving til later, it can wait.
Make the Glaze
Combine butter, brown sugar, half and half, whiskey and a pinch of salt in a medium saucepan. Stir constantly over medium heat until the butter has melted. Then increase heat slightly, and without stirring, allow the mixture to come to a rolling boil. Allow to boil for one minute, then lower heat to simmer for one minute more. Remove from heat and whisk in powdered sugar. Allow to cool for 20 minutes or more until thickened. Then pour over cake. If it becomes too thick, you can heat it up in a microwave.

Cooking is meant to be creative, and sometimes we get the urge to bake but we don’t have all the ingredients. So experiment and taste! You may come to realize you’re an amazing baker!
