I love cookies.
I also love ice cream. 
I love cookies and ice cream together.
I also love the kind of evening when I meander into the kitchen, notice a box of jumbo, grocery-store bakery cookies lingering on the counter, and then – as I reach for one – remember that we have a few new pints of ice cream in the freezer, nestled snugly beside a few pounds of pork butt (try the carnitas). As I fish the ice cream from it’s frosty abode, I push aside the consideration that my impending snack will necessitate extra gym time. Honestly, who cares? I love the gym. Just like I love cookies.
The beauty of this tasty treat is in it’s simplicity. All it takes is two semi-soft cookies, and the willingness to layer some ice cream in between them. That’s it. Just enjoy it. There’s not stigma. No other considerations. It’s just you, some cookies, and some ice cream. As it should be.
So follow these very simple instructions, and then sit back end enjoy your treat. Because you’ve earned it… but even if you haven’t, it’s still delicious.
Select two delicious cookies. I would recommend semi-soft jumbo cookies from your grocery store, like the chocolate chunk cookies that I used here.Take your choice of ice cream out of the freezer, and (if necessary) soften it a bit by leaving it out on the counter, or rush the process using the microwave.Scoop a desired amount of ice cream onto the bottom of one of the cookies. I used about two scoops in this case, but it really depends on the size of your cookies.Place the second cookie on top, and give it a gentle squish to press it into a sandwich.Enjoy your creation.
