The chicken is smoked first then piled high with tons of flavourful ingredients.&nbsp;I love a good sandwich. I mean LOVE. Like stalker kind of love. This grilled chicken sandwich is one I fall in love with all over again every time I make it. It has so many layers of deliciousness. Also, I made fire roasted yellow and red pepper pesto. In addition, I made a gorgeous homemade Smoked Chicken. Then, I combined those things to make this over the top grilled sandwich. It’s so good you may want to hug me. But don’t. Kim does not like PDA. Seriously, don’t try it.What you can try is this sandwich. Seriously, it is so worth the effort. If you have smoked chicken it works beautifully in this recipe. But if you don’t and just want to slap any old chicken on here that’s okay too. Well, maybe not an old chicken. In fact, make sure it’s fresh. To clarify, I don’t want you taking me literally and going to the butcher to ask for an “old chicken”. How embarrassing would that be!Besides smoked chicken, you could also use Brick Chicken in this recipe. If you’re just in a serious lazy mood you can even buy a rotisserie chicken and use that. Whatever floats your boat, man. Pick your battles in life. Chicken ain’t one of them. Ain’t no one got time for that.To sum up, pick your chicken, make your Fire Roasted Yellow and Red Pepper Pesto and get to stepping. Out on your deck that is. Or you patio. Whatever. Just get to stepping wherever your grill is. Then grill this mother. Grill it, eat it, thank me after your third or fourth one. You know, whenever you stop for air. I’m in no rush. I can’t wait.Also, if you want to learn how to Fire Roast Bell Peppers there is a great tutorial on the blog. You can also use your own favourite pesto recipe on this or make my Fire Roasted Yellow and Red Pepper Pesto. Whatever works for you.Personally, I would recommend making the Fire Roasted Yellow and Red Pepper Pesto though. I mean, just look at it.Totally worth the effort. I’ve already had &nbsp;one (okay, so I had three) and I still want to sink my teeth into another one. Just one bite. One little bite.Now go forth and make sandwiches. Seriously, NOW!
