This is a very smart, nuanced, and balanced look at the labor shortages facing restaurants right now. As a restaurant owner, I'm hearing and seeing firsthand that this lack of hireable wait staff and cooks is very real and unlike anything our restaurant has seen in the 15 years we've been open.
