I’m using the #BeehiveCheese #RedButteHatchChile that I shredded.Philly Cheese Steak Sandwiches - Part 1Read MorePhilly Cheese Steak Sandwiches - Part 2INGREDIENTS4 sirloin steaks2 cups sliced mushrooms1 small onion, thinly sliced1 small bell pepper, thinly sliced6 tbsp butter4 tbsp flour3 cups milk2 cups shredded cheese1 tbsp dijon mustard1 tbsp Worcestershire sauce6 hoagie bunsSalt and Pepper to tasteINSTRUCTIONS1) Salt and pepper the steaks to taste and grill to medium rare. Remove from the grill and let them sit for ten minutes. Thinly slice the steaks and set aside.2) Melt a couple of tablespoons of butter in a sauté pan and sauté the onion, mushrooms and bell peppers for about 5 minutes, set aside.3) To make the cheese sauce, melt 4 tbsp of butter in a sauce pan and add the flour mixing together to combine. Whisk the milk into the roux and bring to a boil while stirring. Reduce the heat to simmer and add the shredded cheese, dijon mustard and worcestershire sauce. Stir everything together to combine and continue to gently stir until the cheddar cheese melts and everything is combined and smooth.4) To assemble the sandwiches, add the thinly sliced steak to the hoagie bun along with some of the sautéed onion mixture. Drizzle some of the cheese sauce over the sandwich, serve and enjoy!
